Both times the plates matched the approved sample. Both times the buyer had measured the well \u2014 the flat centre the food sits on \u2014 and compared it against a spec sheet that said nothing except &#8220;11 inch dinner plate&#8221;.<\/p>\n<p>That gap costs a few thousand dollars per order in remakes, freight and lost weeks. Here is what actually sits inside plate sizing standards for dinnerware manufacturing, and the numbers worth writing into a PO instead of a single diameter.<\/p>\n<h2>Diameter is a fired number, not a mold number<\/h2>\n<p>Clay shrinks. A 30 cm jigger mold produces a plate that measures 26.4\u201327.0 cm after firing, because stoneware and porcelain lose roughly 10\u201313% of their linear dimension between forming and glaze firing. Two consequences follow.<\/p>\n<p>The first: your spec has to state <em>fired<\/em> diameter. If a supplier quotes off the mold drawing, the finished plate lands 2\u20134 cm undersize and the argument starts at the port instead of at the sample table.<\/p>\n<p>The second: you need a tolerance. We hold \u00b12% on fired diameter up to 30 cm, which is \u00b10.55 cm on a 27 cm plate. Going tighter than \u00b11.5% is possible, but the reject rate climbs and somebody pays for those rejects \u2014 usually you, in the unit price. Retail dinnerware lives comfortably at \u00b12%. Hotel and restaurant buyers often accept \u00b13%, because in that channel stack height and replacement availability matter more than two millimetres.<\/p>\n<h2>The five numbers that decide your price<\/h2>\n<ul>\n<li><strong>Fired diameter + tolerance.<\/strong> The headline number, and the least informative one on its own.<\/li>\n<li><strong>Well diameter.<\/strong> A rim plate loses about 5 cm of usable surface to its rim (2.2\u20132.5 cm on each side). A coupe plate loses roughly 1.5 cm. A 27 cm rim plate gives you a 22 cm well; a 27 cm coupe gives you 25.5 cm. If your menu specs a 22 cm plate presentation, a 27 cm coupe is the wrong buy.<\/li>\n<li><strong>Weight per piece.<\/strong> A 26.7 cm stoneware rim plate runs 400\u2013480 g. The same diameter in HORECA grade is 600\u2013900 g. Bone china sits at 250\u2013300 g. Weight is the fastest proxy for body density, and body density is what resists chipping.<\/li>\n<li><strong>Water absorption.<\/strong> Porcelain below 0.5%; stoneware 1\u20133%. This number decides whether a plate survives a commercial dishwasher line and whether it can take a 200 \u00b0C oven cycle.<\/li>\n<li><strong>Carton cubage.<\/strong> The one buyers forget, and the one that quietly moves your landed cost.<\/li>\n<\/ul>\n<h2>A 2 cm change in carton size costs 15% of your container<\/h2>\n<p>Concrete example from our own packing line: a 26.7 cm rim plate ships 12 pieces to a master carton measuring 30\u00d730\u00d728 cm, or 0.0252 CBM. A 20GP container holds roughly 28 CBM of usable volume after palletising and door clearance, so about 1,100 cartons \u2014 close to 13,200 plates. Redraw that carton at 32\u00d732\u00d730 cm (0.0307 CBM) and the same container carries about 910 cartons. Same freight invoice, 15% fewer plates.<\/p>\n<p>Breakage follows the same logic. Five-layer corrugated board with die-cut dividers holds claims under 1% across a year of European shipments. Single-wall cartons with paper interleaving run 3\u20138%. The cheap carton looks better on the packing list and worse on the landed cost, every time.<\/p>\n<h2>Rim versus coupe: the geometry that eats shelf space<\/h2>\n<p>Rim plates nest at roughly 2.1 cm of added height per plate. Coupe plates, being a continuous curve, nest at about 2.6 cm. Stack 24 of each and you have 50 cm of rim plate against 62 cm of coupe. That 12 cm decides your carton height, your pallet count, and whether the set fits the shelf in a retail fixture.<\/p>\n<p>Decoration has its own constraint. The standard print band on a rim plate is 22\u201325 mm wide. Below 18 mm the decal crowds the well, and edge chipping starts taking the logo with it. If your artwork needs a 30 mm band, you are not choosing a bigger plate \u2014 you are choosing a different rim profile and a new tooling cost.<\/p>\n<h2>What the dishwasher and the oven actually allow<\/h2>\n<p>Thermal shock resistance is usually quoted as a \u0394T figure around 120 \u00b0C. Porcelain bodies under 0.5% absorption with no metallic decoration handle a 200 \u00b0C oven; stoneware with a reactive glaze usually does not, and the failure shows up as a hairline in the rim after the third cycle, not the first. Metallic gold or platinum rims dull after roughly 20\u201330 commercial dishwasher cycles regardless of what the body can take.<\/p>\n<p>Fit is the other hard limit. 27.9 cm (11 in) is the practical maximum for the lower rack of a US residential dishwasher. Charger plates at 30.5\u201333 cm do not fit flat in most homes, which is why they sell to caterers and not to retail.<\/p>\n<h2>Food-contact limits belong on the PO<\/h2>\n<p>US FDA action levels for ceramicware sit at 3.0 \u00b5g\/mL lead for flatware and 0.5 \u00b5g\/mL for cups. The EU directive <a href=\"https:\/\/eur-lex.europa.eu\/eli\/dir\/1984\/500\/oj\" target=\"_blank\" rel=\"noopener nofollow\">84\/500\/EEC<\/a> caps lead at 0.8 mg\/dm\u00b2 and cadmium at 0.07 mg\/dm\u00b2 on flatware, with tighter limits already in the pipeline. In practice, California&#8217;s Prop 65 pushes the working limit well below the federal numbers for anything sold in US retail.<\/p>\n<p>Write the compliance target into the PO, and ask for the test report per firing batch. A declaration on letterhead is not a test report.<\/p>\n<h2>Where orders actually go wrong<\/h2>\n<ul>\n<li><strong>Diameter measured at two different places.<\/strong> Rim edge versus well is a 4\u20135 cm difference and the most common cause of &#8220;undersize&#8221; claims we see.<\/li>\n<li><strong>Assuming one mold covers a size range.<\/strong> Every diameter needs its own jigger profile. A new size is $300\u2013800 in tooling, with 500\u20131,000 pieces MOQ per size per decoration.<\/li>\n<li><strong>Weight creep.<\/strong> A cheaper body with more filler can cut 15% of the piece weight. It also chips faster in transit, and the difference only shows up once the cartons have been through two transshipments.<\/li>\n<li><strong>Mixing rim profiles inside a set.<\/strong> Molds are matched to each other. Two profiles in one set do not nest, and the set needs 30% more carton volume.<\/li>\n<\/ul>\n<h2>What to put on the spec sheet<\/h2>\n<ol>\n<li>Fired diameter with tolerance (e.g. 270 mm \u00b12%)<\/li>\n<li>Well diameter<\/li>\n<li>Height and rim width<\/li>\n<li>Weight per piece, \u00b15%<\/li>\n<li>Water absorption class, plus dishwasher cycle target<\/li>\n<li>Stack height per 12 pieces<\/li>\n<li>Master carton dimensions, pieces per carton, gross weight<\/li>\n<li>Inspection level: AQL 2.5 for major defects, AQL 4.0 for minor<\/li>\n<li>Food-contact declaration: FDA, EU 84\/500\/EEC, Prop 65<\/li>\n<\/ol>\n<h2>What we would order if it were our money<\/h2>\n<p>One rim profile across the whole set, always. For a first retail range: 27 cm rim dinner plate, 20.5 cm salad plate, 15.5 cm bread and butter plate. Skip chargers unless you are selling to caterers \u2014 the freight per piece is punishing and half your customers cannot store them. Choose stoneware when you are supplying restaurants, porcelain when retail shelf appeal and weight matter more than chip resistance.
